What Hanukkah is

The eight-day Jewish festival of lights, commemorating the rededication of the Second Temple and the oil that burned for eight days.

One additional candle is lit each night, and fried foods mark the miracle of the oil.

When it falls, and why the date moves

The date comes from a lunisolar calendar, which follows the moon but adds a leap month every few years to stay in step with the seasons. That is why it drifts earlier for two or three years and then jumps back.
